Ingredients
1Ā cupĀ Dried DatesĀ pitted
1Ā cupĀ Peanut ButterĀ 
1/2Ā cupĀ PeanutsĀ 
1/2Ā cupĀ hazelnutsĀ 
1/2Ā cupĀ almondsĀ 
1/2 cupĀ cashewsĀ 
1/2Ā cupĀ pumpkin seedsĀ 
1/2Ā cupĀ sunflower seedsĀ 
2Ā tblsĀ honey
2Ā eggs

Instructions
Preheat oven to 180°C
Line a baking tray with baking paper
Process the dates for a few seconds to break them up. Doesnt need to be be smooth, unless your kids are fussy about date bits - in that case you can process to a paste.
Add remaining ingredients (beanut butter, nuts, honey and eggs)and process to a chunky mix. See my image in the blog post above for idea on consistency)
Spoon walnut size amounts onto the baking paper. Bake for 20 minutes at 180°C Keep an eye on the cookies in the final minutes of baking to prevent th nuts over browning.
Allow to cook completely before storing.

1-2Ā teaspoonsĀ vanilla bean paste

For the chocolate topping:
200Ā gĀ dark chocolateĀ 
2Ā tablespoonsĀ oil of choiceĀ 

INSTRUCTIONS
To make the slice:
Grease and line a 24cm x 24cm baking tin with baking paper. Try to get the baking paper as flush up against the tin as possible by folding in some edges of the paper.
Place the chocolate, butter and condensed milk in a medium sized heatproof bowl. Half fill a small saucepan with water and place the bowl on top, ensuring the water doesn’t touch the bowl. Turn the heat to low-medium and allow the mixture to melt. Stir intermittently until it is completely melted and combined. It should be chocolate in colour and have a thick, shiny appearance.
While the chocolate mixture is melting, crush the biscuits roughly in a large bowl. You can use your hands to break them up or the end of a rolling pin. I prefer to keep lots of bigger chunks because they tend to continue breaking down as you stir the chocolate through.
Add the cocoa powder and walnuts to the crushed biscuits and stir.
When the chocolate is done, add the sea salt and vanilla bean paste, stirring to combine. Pour the chocolate mixture over the biscuits and use a large spoon to completely incorporate.
When the mixture is well combined, pour it into the lined container and use a spatula to get the top as flat as possible, taking it right to the edges. This is important so that the chocolate topping has an even surface to spread over.
Place the slice in the fridge for at least two hours or until completely set.
To make the chocolate topping:

The Chocolate 
Melt the chocolate in the same double boiler method you use before. Once melted, add the oil and stir well to combine.
While hot, pour over the refrigerated slice. Work quickly to spread the chocolate evenly or it will begin to harden.

Ingredients
1.5Ā kgĀ pumpkinĀ Kent or Butternut, cut into small 1-2cm cubes
120Ā gramsĀ goats cheeseĀ broken into small chunks
4-6Ā cupsĀ rocket leavesĀ torn
1/2Ā cupĀ pine nutsĀ toasted
1/2Ā cupĀ pepitas
saltĀ to taste
4Ā tbspĀ olive oilĀ plus extra to drizzle over at the end

Instructions
Pre-heat the oven to 240 °C (464 F).
Cut the pumpkin into small, 1-2 cm sized cubes and arrange over a baking tray in a single layer. If required, use two trays. Toss the pumpkin pieces through the olive oil and add a little salt.
Roast the pumpkin in the oven until it is golden and crispy on the edges, but still holding its shape (around 20-25 minutes). You may need to turn the pumpkin halfway through roasting.
Allow the pumpkin to cool on the tray while you prepare the other ingredients.
Add the pinenuts and pepitas to a dry frying pan (no oil). Using a wooden spoon, stir the nuts over low heat, until the nuts have browned slightly. Stir continuously to avoid burning. Remove from the heat and allow to cool.
In a large salad bowl, mix the roasted pumpkin, goats cheese and rocket together until combined. Add a drizzle of olive oil and sprinkle the pine nuts and pepitas over the top. Serve while warm, or cover and store in the refrigerator and serve cold when required. Enjoy!

INGREDIENTS
4 egg whites
2/3 cup caster sugar
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
1 cup roasted hazelnuts, coarsely chopped
300 millilitre carton cream, whipped
2 bananas, sliced
1 punnet (250g) strawberries, thinly sliced
cocoa powder, for dusting

METHOD
Preheat oven to slow, 150°C. Line an oven tray with baking paper.
In a large, clean bowl, using an electric mixer, beat egg whites until soft peaks form.
Gradually add sugar, one tablespoon at a time, beating until sugar dissolves and foam is stiff, thick and glossy. Beat in lemon juice and vanilla; fold in nuts.
Form six 12cm nests on tray. Bake 10 minutes.
Reduce oven temperature to slow, 120°C.
Bake nests a further 20 minutes. Cool in a turned-off oven, with door ajar, to dry completely.
Top meringues with cream. Arrange bananas and strawberries on top; dust with cocoa.

Ingredients
1Ā cupĀ chopped pecans
1Ā cupĀ chopped almonds
1/4Ā cupĀ butter,Ā softened
1/2Ā cupĀ granulated sugar
3Ā largeĀ eggs
1Ā cupĀ light corn syrup
1Ā teaspoonĀ vanilla extract
1Ā refrigerated pie crust
1Ā cupĀ toffee bits

Instructions
Place pecans and almonds on a baking sheet and place in a 220°C oven for about 8 minutes to toast them. Watch them carefully and do not leave them in longer than 8 minutes or they might burn.
Place butter and sugar in a large bowl. Use a hand-held electric mixer to beat them together until light and fluffy.
Beat eggs in one at a time.
Beat in corn syrup and vanilla.
Fit pie crust into a 200mm pie pan, fold the edges under and crimp them.
Pour filling into pie crust.
Sprinkle toasted nuts and toffee pieces on top.
Bake for 40 minutes or until top of the pie and crust is golden. It should still jiggle some in the middle, but will set up as it cools.
Cool completely before slicing.

Loaded with protein boosting nuts, heart healthy flaxseed, chia seeds, and sweetened with dried fruit. These little energy balls are a perfect on-the-go snack!

Ingredients
3/4 cupĀ Medjool dates, pitted (about 7-8)
1 cupĀ almonds, preferably raw
1 cupĀ dried fruit*, chopped if necessary
1/2 cupĀ sunflower seeds
2 Tbsp. chia seeds
2 Tbsp. ground flaxseeds
1/2 tsp. vanilla extract
1/4 tsp. ground cinnamon

Instructions
Line a sheet pan with baking paper and set aside.
In a bowl of a food processor, combine the pitted dates and almonds. Pulse until coarse crumb like consistency.
Add the remaining ingredients and process until well combined. The mixture should be sticky and easily stick together between two fingers. If the mixture seems dry, add 1 Tablespoon of water at a time.
Roll a tablespoon of the mixture into approximately 1-inch ball. Transfer to prepared sheet pan and repeat until all of the mixture has been rolled.
Refrigerate for about an hour or until the balls are firm. Store refrigerated in a closed container. Makes 20-23 balls.

2 cupsĀ all-purpose flour

1 teaspoonĀ baking soda
1/4 teaspoonĀ salt
1 cupĀ choppedĀ pecans
250gĀ bag ofĀ chocolate chipsĀ 
Banana Slices for topping

Instructions
Preheat oven to 220°C. Line a loaf pan with baking 
paperĀ and spray In a medium bowl,Ā mash ripe bananasĀ until smooth and slightly chunky.Ā 
In a large bowlĀ combine melted or softened butter with brown sugarĀ until smooth.Ā 
Add inĀ eggs and whisk until smooth.
To mixture,Ā add milk and vanilla extract until combined. Add in in theĀ mashed bananas to the batterĀ and mix until incorporated.Ā 
Add inĀ flour, cinnamon, baking soda and salt to batterĀ and gently stir until batter is combined. Do not over mix, batter lumps are okay.Ā 
Gently fold in chocolate chips or chopped chocolateĀ (reserve 1/4 cup for topping) andĀ pecansĀ until just combined.
Pour batter into a prepared loaf tin, smooth the top and top with a few banana slices and remaining chocolate.Ā Bake banana bread for 50-60 minutes or until a tooth pick comes out clean.Ā 
Allow banana bread to cool for 10-20 minutes before transferring to a wire rack and slicing.Ā

This delicious quick bread is loaded with dried fruits, nuts, and seeds, for a healthy breakfast or energy snack. Ā It also happens to be absolutely fabulous toasted!

Ingredients
2Ā ripe bananasĀ 
2Ā large eggs
1/4Ā cupĀ melted coconut oil
2Ā cupsĀ almond flour
1Ā tspĀ baking powder
1/4Ā tspĀ salt
2Ā TbspĀ flax seeds
2Ā cupsĀ chopped nuts
2Ā cupsĀ chopped dried fruits

Instructions
Set oven to 220°C. Lightly spray a standard loaf pan. I like to line it with a sheet of baking paper so I can lift the bread out for slicing.
Make sure your dried fruit and nuts are chopped fairly evenly.
Mash the two bananas really well. I actually did this in my small food processor to get a smooth result. You should have anywhere from 3/4 to a scant cup of mashed banana.
Put the banana into a large mixing bowl and whisk in the eggs and coconut oil really well.
Stir in the almond flour, baking powder, and salt and blend well.
Fold in the fruits, nuts, and seeds and blend until everything is well distributed.
Turn the batter into the loaf pan and spread out the dough evenly, especially into the corners. Make sure to spread the dough out flat and even.
Bake for 40 minutes or until starting to turn golden and a toothpick inserted in the center comes out dry. This bread does not rise, so it will still be flat. The exact cooking time will depend somewhat on the exact dimensions of your loaf pan, as even 'standard' ones can vary. Let cool briefly before removing the bread from the pan using the parchment paper to lift it out, and let it cool further on a rack.

60Ā gramsĀ plain Greek yogurt
1/8Ā teaspoonĀ garlic powder
1Ā dashĀ cayenne

2Ā tablespoonsĀ cold water
1/2Ā lemonĀ (juiced)
1/4Ā teaspoonĀ cumin
1/4Ā teaspoonĀ honey
50Ā gramsĀ cherry tomatoesĀ (halved)
3Ā tablespoonsĀ crumbled feta cheese
50 gramsĀ pine nutsĀ (toasted)
4Ā mint leavesĀ (minced)

Directions
Preheat the oven to 220°C. Line a baking tray with baking paper.
Cut the eggplant in half lengthwise and place cut side up on the prepared baking tray. Rub with the olive oil and sprinkle liberally with the salt and black pepper.
Roast the eggplant on middle rack of oven until tender, 27-30 minutes. While eggplant bakes, prepare the dressings.
Stir together the yogurt, garlic powder, cayenne, salt, and pepper in a small bowl. Set aside.
Whisk the tahini, water, lemon juice, cumin, and honey together in a small bowl until smooth. Season with salt and pepper.
Check to see that eggplant is done. Remove from oven or add time as needed.
Allow the eggplant to cool slightly. To assemble the salad, spoon yogurt onto a serving plate, then use the back of spoon to spread it into an even layer. Arrange eggplant halves on top. Scatter cherry tomatoes over eggplant. Drizzle the tahini sauce over dish and sprinkle with feta, pine nuts and mint

1 1/2Ā cupsĀ warm waterĀ 

Instructions
Add the almonds, hazelnuts, and pumpkin seeds into a food processor and pulse until they resemble coarse flour.
Combine the almond-hazelnut-pumpkin-seed "flour" with the rest of the ingredients. Stir until the dough is combined.
Divide the dough in half (or thirds if you want really thin crackers). Place the dough in between two pieces of baking paper.Ā Using a rolling pin, firmly roll out the dough into a thin sheet. Remove top layer of baking paper and using the tip of a knife, score the dough into shapes you like . Repeat with remaining half of dough.
Preheat oven to175°C. Slide the backing paper with the dough onto a baking sheet and bake for 20 minutes. Remove the cookie sheet from oven, flip the whole cracker over and peel the baking paper off of the back. 
The easiest way to flip the cracker is to slide the bqking paper from the baking sheet onto a big cutting board. Then coverĀ theĀ cutting board with the baking sheet and flip the cutting board over.
Bake for another 10 minutes, until fully dry, crisp, and golden around the edges.
Let cool completely, then break crackers along their scored lines and store in an airtight container for up to 3 weeks.Ā

Australian almond production occurs westward from the Riverina region to Sunraysia, Riverland Northern Adelaide Plains and the Swan region in Western Australia. Almond production requires winter chill, and hot, preferably dry harvest weather from Late January to April. Almonds love the Mediterranean type of climate in these production regions that is also excellent for minimising disease pressure. The availability of irrigation water is also a requirement to grow crops in these regions.
Within these producing regions are major regional cities such as Griffith and Mildura and towns such as Hillston, Robinvale and the many located in the Riverland that provide agricultural supplies and the permanent and seasonal staff for the orchards. Almonds are an important part of the diverse horticultural industries that underpin the economic wellbeing of these regions.
