HEALTHY SNACK BARS WITH FRUIT NUTS AND SEEDS 💛💛💛💛Easy homemade snack bars made with fruit, nuts and seed. Great for healthy snacking or a portable nutritious breakfast.

INGREDIENTS
4 teaspoon chia seeds
250g dried cranberries (2 cup)
125g of dried apple slices (2 cup lightly packed)
250g of dried apricots ( diced )
200g  walnuts (1 1/2 cup)
200g pecans (1 1/2 cup)
250g ground almonds or almond flour (about a cup)
2 teaspoon ground cinnamon
100g of white sesame seeds 
100g pine nuts 
1 cup raw honey
1/4 teaspoon salt

INSTRUCTIONS
Heat the oven to 180ºC  Line a small baking pan with baking paper. Soak the chia seeds in 2 tablespoons of cold water.
Place the next 6 ingredients - cranberries through almond flour - in the bowl of a food processor and pulse until everything is finely chopped but not powdered. Keep checking until you're happy with the texture.
Pour the mixture into a big bowl and stir in the cinnamon, sesame seeds, pine nuts, soaked chia seeds with their liquid/gel, and raw honey. Mix until everything is well combined and sticks together like dough when you squeeze it. It's best to use your hands for this. If the mixture is too dry, add a bit of water.
When the mixture is uniform, push it down into the lined baking pan with your fingers, to a depth of about 1/2 inch or so. If it's sticky, wetting your fingers will help. Bake for 55-60 minutes or until the whole surface looks dried out and starts to turn golden.
Transfer the pan to a wire rack to cool. When completely cool, cut into whatever size bars you like.

This is an all-time favorite salad recipe!

INGREDIENTS
DRESSING:
4 tablespoons white wine vinegar
3 tablespoons olive oil
1½ tablespoons Dijon mustard
salt and pepper, to taste

SALAD:
1 head green leaf lettuce, cleaned and chopped
1 head red leaf lettuce, cleaned and chopped
2 medium vine-ripened tomatoes, chopped
1 large avocado, chopped (about 1 cup)
1/2 cup pine nuts, toasted
1/4 cup shredded mozzarella cheese

INSTRUCTIONS
PREPARE THE DRESSING:
Place the dressing ingredients in a shaker jar. Shake well (or whisk in a bowl) and refrigerate until chilled.

PREPARE THE SALAD:
Add the salad ingredients to a large bowl and toss with the chilled dressing (add a little at a time until you have used a desired amount).

Serve immediately.

NOTES
An easy way to toast raw pine nuts is to dry toast them in a heated saucepan, stirring often so that they do not burn (they burn easily if not watched).Grill some chicken and marinate it in the salad dressing for a great summer, main-dish salad!

Vanilla & Butterscotch Nut Tart
Assorted nuts are coated in a smooth, creamy butterscotch sauce with just a hint of Vanilla then baked in a pecan shortbread crust.

Ingredients
For the crust:
1 ¼ cups all-purpose flour
¼ teaspoon salt
2 tablespoons light brown sugar 
2 tablespoons granulated sugar
¼ cup ground toasted pecans
8 tablespoons unsalted butter

For the tart:
5 cups assorted unsalted nuts pistachios, walnuts, pecans, hazelnuts, cashews
4 tablespoons unsalted butter
⅓ cup dark brown sugar 
⅓ cup granulated sugar
¼ teaspoon fine sea salt
2 tablespoons water
⅓ cup light corn syrup
⅓ cup heavy cream
 1 teaspoon pure vanilla extract

Instructions
To make the crust: Add the flour, salt, sugars and pecans to the bowl of a food processor. Pulse to blend. Add the butter and process until a soft dough starts to form. Do not over mix.
Spray the bottom and sides of a 35 x 10cm tart pan with a removable bottom. Press the dough evenly into the sides and bottom of the pan. Freeze the tart crust for 30 minutes.
Preheat oven to 275°C
Prick the bottom of the tart with a fork. Line the tart with a piece of baking paper and lightly fill with dried beans or pie weights. Bake for 25-30 minutes or until the crust starts to set. Remove the baking paper and beans and bake for an additional 10 minutes. Set aside to cool.

To make the tart:
Melt the butter in a large heavy-bottom saucepan. Add the sugars, salt, water and corn syrup. Heat over medium-high stirring constantly until the sugars dissolve. Bring the mixture to a boil, reduce the heat to medium and and cook for 5 minutes, stirring constantly.
Once the mixture thickens and creates slow thick bubbles, remove from the heat. Whisk in the cream, vanilla, taking care as the mixture may sputter.
Gently stir in the nuts and pour the mixture into the prepared tart pan.
Bake for 15-20 minutes or until the filling bubbles. Cool completely on a rack. Serve at room temperature.

This West African-inspired peanut soup recipe is a creamy and comforting, spicy vegan soup. Made with a simple combination of peanut butter, tomato paste and collard greens, this soup comes together quickly and would be a great weeknight meal. If you love spicy flavors like me, don’t hesitate to use liberal amounts of ginger and garlic.

INGREDIENTS
4 cups low-sodium vegetable broth
2 cups water
1 medium red onion, chopped
2 tablespoons peeled and minced fresh ginger
4 cloves garlic, minced
1 teaspoon salt
1 bunch collard greens (or kale), ribs removed and leaves chopped into 1-inch strips
1 cup unsalted peanut butter chunky 
1/2 cup tomato paste
Hot sauce, like sriracha (AKA rooster sauce)
1/2 cup roughly chopped peanuts, for garnish

INSTRUCTIONS
Combine the broth and water in a medium Dutch oven or stock pot. Bring the mixture to a boil, then add the onion, ginger, garlic and salt. Cook on medium-low heat for 20 minutes.
In a medium-sized, heat-safe mixing bowl, combine the peanut butter and tomato paste, then transfer 1 to 2 cups of the hot stock to the bowl. Whisk the mixture together until smooth, then pour the peanut mixture back into the soup and mix well. Stir in the collard greens and season the soup with hot sauce to taste.
Simmer for about 15 more minutes on medium-low heat, stirring often. Season with additional salt or hot sauce if desired. Serve over cooked brown rice if you’d like, and top with a sprinkle of chopped peanuts.

A classic dessert with a twist. Best served warm with a scoop of ice cream

Ingredients
Filling
6 granny smith apples 
1 - 2 Tbsp Lemon juice
3 - 4 Tbsp Light brown
¼ Tsp Cinnamon powder

Topping
150g (1 Cup) Walnuts
100g (1 Cup) Rolled oats
130g (1 Cup) Flour
3 - 4 Tbsp Light brown sugar
1 Tsp Almond extract
60 g Salted butter, melted

Instructions
Preheat oven to 170 C 
Peel and core apples. Dice into medium to small cubes and fold in lemon juice, brown sugar and cinnamon powder. Place filling into a pie tin or ovenproof safe dish of choice and place in oven for 15 minutes.
In the meantime add rolled oats, flour and half of the walnuts (75 g or ½ cup) into a food processor and blend till smooth. Add to a bowl along with the soften butter, sugar and vanilla.
Mix the crumble ingredients together initially using a spoon then using your fingers until a crumble forms. Gently crush the remaining walnuts into medium sized chunks and fold into crumble using a spatula.
After 15 minutes remove apples from the oven and sprinkle the crumble mix on top.
Bake in the oven for another 20 minutes until crust is golden brown. If you prefer your apples to be softer, bake for another 10 minutes.
Serve with ice cream or whipped cream

INGREDIENTS

1 1/2 cup white whole wheat flour or regular whole wheat flour
2 tablespoons sugar 
2 teaspoons aluminum-free baking powder
1/2 teaspoon sea salt
1/4 teaspoon nutmeg
1 cup chopped walnuts or pecans
1/3 cup melted coconut oil
3/4 cup milk of choice, lukewarm
3/4 cup overripe mashed bananas (about 2 small bananas), plus more for topping
1 large egg
1/2 teaspoon vanilla extract

INSTRUCTIONS
Heat waffle iron on high heat, about one notch down from the highest setting. 
Preheat oven to 340 °C
In a medium bowl, whisk together the flour, sugar, baking powder, sea salt and nutmeg. Stir in the chopped walnuts.
In a microwave-safe bowl, combine the melted coconut oil and milk. Microwave for 30 seconds, or until the mixture is lukewarm. Whisk in mashed banana, egg, and vanilla extract.
Add wet ingredients to dry ingredients and stir until just combined. Be careful not to over mix. Tiny lumps may remain. Pour batter onto the heated waffle iron, enough to cover the center and most of the central surface area. Once the iron has stopped steaming and the waffle is deeply golden, transfer it to a cooling rack or baking sheet. Don’t stack your waffles on top of each other, or they’ll lose crispness. Place in oven to keep warm. Repeat.
Top with sliced bananas and 100% pure maple syrup, and serve. Save leftovers in the fridge and reheat by placing the waffle back in the griddle or in the toaster on a light setting

Blueberry-Coconut-Macadamia Muffins
The one-two punch of coconut and macadamia nuts in this luxurious muffin will make you think you're having your morning coffee in  paradise. Drizzle with honey for an added touch of sweetness 

Ingredients
¼ cup unsweetened coconut
2 tablespoons plus 3/4 cup all-purpose flour, divided
2 tablespoons plus 1/2 cup brown sugar, divided
1 cup chopped macadamia nuts, divided
2 tablespoons canola oil, divided
1 cup whole-wheat pastry flour or whole-wheat flour
1 teaspoon baking powder
¼ teaspoon baking soda
⅛ teaspoon salt
½ teaspoon ground cinnamon
1 large egg
1 large egg white
3/4 cup nonfat buttermilk,
2 tablespoons butter, melted
½ teaspoon coconut or vanilla extract
1 ½ cups fresh or frozen (not thawed) blueberries

Directions
Step 1
Preheat oven to 250°C. Coat a 12-cup muffin pan with cooking spray.
Step 2
Combine coconut, 2 tablespoons all-purpose flour, 2 tablespoons brown sugar and 2 tablespoons macadamia nuts in a small bowl. Drizzle with 1 tablespoon oil; stir to combine. Set aside.
Step 3
Whisk the remaining 3/4 cup all-purpose flour, whole-wheat flour, baking powder, baking soda, salt and cinnamon in a medium bowl. Whisk the remaining 1/2 cup brown sugar, the remaining 1 tablespoon oil, egg, egg white, buttermilk, butter and coconut (or vanilla) extract in a medium bowl until well combined. Make a well in the center of the dry ingredients and pour in the wet ingredients; stir until just combined. Add blueberries and the remaining 3 tablespoons nuts; stir just to combine. Divide the batter among the prepared muffin cups. Sprinkle with the reserved coconut topping and gently press into the batter.
Step 4
Bake the muffins until golden brown and a wooden skewer inserted in the center comes out clean, about 20 minutes. Let cool in the pan for 10 minutes, then remove from the pan and let cool on a wire rack at least 5 minutes more before serving.

great little recipe for lockdown 
INGREDIENTS
125 gram butter, melted, plus 25g extra
1 cup self raising flour
1 cup desiccated coconut
1/2 cup brown sugar
395 gram can sweetened condensed milk
2 tablespoon golden syrup
2 cups chopped walnuts

METHOD
Preheat oven to moderate, 180°C. Lightly grease and line a 20 x 30cm slice pan with baking paper.
In a large bowl, mix butter, flour, coconut and sugar together. Press mixture evenly into base of pan. Bake 10 minutes.
In a small saucepan, combine condensed milk, syrup and extra butter. Stir on low heat 1-2 minutes until smooth. Pour evenly over cooked base. Bake 10 minutes until golden and begins to bubble.
Immediately press walnuts into soft topping. Allow to cool completely. Cut into slices to serve.
